Rava uttapam

An instant tiffin that skips the fermenting: semolina whisked with curd into a thick batter, rested just long enough to swell, then poured into thick rounds on the tawa and studded with chopped onion, tomato, green chilli and coriander. Crisp-bottomed and soft on top, lovely with coconut chutney.
Method

Whisk rava with curd, salt and enough water to a thick, smooth batter that drops slowly off the spoon. Rest it for 20 minutes so the semolina swells.
Done when: The rested batter is thick and spoonable, like a loose idli batter, and coats the back of a spoon without running off.

Finely chop the onion, tomato, green chillies, ginger and fresh coriander leaves. Stir a small handful into the batter and keep the rest in a bowl for topping.
Done when: All the topping vegetables are finely and evenly chopped, with a little mixed into the batter and the rest reserved.

Heat the tawa on medium until a drop of water skips across it. Pour a ladle of batter and spread it into a thick round about a centimetre deep, then drizzle a little oil around the edge.
Done when: The batter has settled into an even, thick disc and the surface is just starting to lose its shine as it sets.

Scatter a spoon of the reserved onion, tomato, green chillies and fresh coriander leaves over the wet top and press gently with the ladle. Cover and cook until the base is golden, then flip and cook the topping side for 2 minutes.
Done when: The base is deep golden and crisp, the top is set and no longer wet, and the vegetables are softened and lightly charred at the edges.

Slide the uttapam off hot and repeat with the rest of the batter. Serve straight away; coconut chutney alongside is traditional if you have some.
Done when: Each uttapam is served hot, crisp underneath and soft on top.
