A thin, pourable Gujarati kadhi: full-fat curd whisked smooth with besan and a little jaggery, then simmered gently so it never splits, and finished with a ghee tempering of mustard, cumin, methi, dried red chilli, curry leaves and hing. Sweet, tart and soupy, it is meant to be ladled over plain steamed rice or khichdi.

Method

  1. Chop ginger fine, slit green chillies and pull curry leaves off the stalks.

    Done when: Ginger is finely chopped, chilli is slit and the curry leaves are separated from their stalks.

  2. In a bowl whisk 600 g thick curd, 60 g besan and 1/4 tsp turmeric powder together with about 500 ml water until completely smooth with no lumps.

    Done when: The curd-besan mixture is a smooth, thin, lump-free buttermilk consistency with the ginger and chilli prepped alongside.

  3. Pour the whisked mixture into the saucepan with 30 g jaggery, ginger, green chillies and 1 tsp salt. Bring to a boil stirring constantly, then lower the heat and simmer for 15 minutes until it thickens slightly and loses its raw-besan smell.

    Done when: The kadhi has thickened to a thin pouring consistency, tastes cooked rather than raw and floury, and is gently sweet-tart.

  4. Heat 1 1/2 tbsp ghee in the tadka pan until it shimmers, then add 1 tsp mustard seeds. When they crackle add 1 tsp cumin seeds, 1/4 tsp fenugreek seeds, dried red chillies, 2 sprig curry leaves and 1/4 tsp asafoetida and let them sizzle for a few seconds.

    Done when: The mustard has popped, the cumin and methi smell toasty and the curry leaves are crisp, with the ghee fragrant but not burnt.

  5. Pour the sizzling tempering over the kadhi and stir it through. Simmer for another 1 minute, scatter with fresh coriander leaves if using and serve hot over steamed rice.

    Done when: The tempering is folded through, the kadhi is glossy and aromatic and ready to ladle over rice.
